Ingredients
1 can artichoke hearts in water
1 Avocado chopped
1 Mango sliced
4 Roma tomatoes
3 green onions diced
2 celery diced
2 small Cucumbers diced
3 Tbsp Cilantro finely chopped
3 Tbsp olive oil
3 Tbsp Rice wine vinegar
1 clove garlic squeezed
Instructions
Stir all ingredients together, add dressing and serve immediately. Enjoy this a a meal by adding seafood or chicken. Light and just right , “Lean for life”.
